Sweet Chestnuts have been used and enjoyed worldwide for several thousand years. Chestnuts have about half the calories of other nuts and have the lowest fat content of all the main edible nuts. Very popular method of eating chestnuts involves roasting them over an open fire. This is one of the most romantic and delicious method of preparing them for consummation. Roasting requires scoring the fruit beforehand to prevent undue expansion and "explosion" of the fruit. Once roasted, its texture is similar to that of a baked potato, with a delicate, sweet, and nutty flavor. This method of preparation is popular in many European countries, not only in Italy, but also in Portugal, Spain, Turkey, Greece, Italy, France, Czech and Slovak Republic as well as in East and Southeast Asia. I have captured this image of sweet chestnuts roaster in Livigno in northern Italy.
