Photographer's Note

Vietnamese is my favourite cuisine. Not because of the high end restaurants, but because for the everyday meals, the simple family stuff, the freshness of everything.

High end restaurants offer quality meals pretty much in every country, but when it comes to daily meals I know no country that offers such quality as Vietnam. I am convinced that just a simple student meal, for example, is nowhere better (and healthier) than in Vietnam...and I've tried quite a few countries.

THIS PICTURE was shot really, really early and features a family having breakfast out together. The standard Vietnamese breakkie is phở, usually phở bò, and in the south often phở bò tái...which is also my favourite!

For phở newbies, I'll explain:
- phở = noodle soup (noodles in a hearty broth)
- bò = with beef
- tái = means that the beef is raw-cooked

A terrific way to start the day, especially with friends and family...that's real quality of life!

WORKSHOP shows a slightly fancier kind of noodle soup. Delicious!
