Photographer's Note
A kadaif (kanafeh) pastry is made by putting down a layer of wire kadaif, then a layer of a filling of chopped nuts, then another layer of wire kadaif. The pastries are painted with melted butter, baked until golden brown, then drenched in sugar or honey syrup.
Here is a Craft shop which produces wire kadaif, so far I have not had a chance to see how it is produced! The woman's left hand is a device from which the jets of dough are forced out on a warm disk, where the wires are baked.
Recorded in the street of old crafts in Veliko Trnovo.
